Ingredients

Shrimp

  • 1 lbs peeled shrimp
  • 1 tbsp Cajun seasoning
  • 1 tbsp minced garlic

Salsa

  • 1 whole mango, diced
  • 1/2 red onion, diced
  • 1/4 cup jalapeños, diced
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice
  • Salt & pepper to taste

Cilantro Lime Dressing

  • 1/2 cup cilantro
  • 1 half squeeze lime (juice) and zest
  • 4 tbsp mayo or greek yogurt
  • 1 jalapeños
  • 3 clove garlic
  • 2 tbsp olive oil
  • Salt & pepper to taste

Other

  • 1/4 cup fresh corn
  • 2 cup cooked rice

Instructions

  • Get the shrimp ready: Marinate the shrimp with garlic and Cajun seasoning; set aside.
  • Making the salsa: In a bowl, mix mango, onion, jalapeño, cilantro, and lime juice to make the salsa. Set aside.
  • Sauce it up: Blend all cilantro lime dressing ingredients until smooth.
  • Fire it up: Cook the shrimp in a hot skillet until browned and cooked through.
  • To assemble: add rice to a bowl, top with shrimp and salsa, corn, and drizzle with cilantro lime dressing.
